Cottage Cheese Pancakes

Ingredients
- ½ cup Cottage cheese low fat (115g)
- 1 large egg
- 1 teaspoon Pure vanilla extract 5ml
- ¼ cup Self rising flour 30g
- 2 teaspoon Splenda or Stevia sweetener 10ml
- 1 teaspoon Baking powder 5g
- 1 spray Olive oil extra virgin
Instructions
- Add the cottage cheese, egg, vanilla, flour, sweetener, and baking powder to a bowl. Mix gently until just combined.
- Continue mixing until you get a thick batter. It will look slightly lumpy, that’s completely fine.
- Heat a non-stick pan over medium heat and lightly spray with olive oil. Spoon about ¼ cup of batter into the pan, letting it spread naturally into a small round pancake.
- Let it cook undisturbed until bubbles form on top and the edges look set, about 2 to 3 minutes.
- Flip carefully and cook the other side until golden and cooked through.
- Repeat with the remaining batter, then serve warm.
Notes
- Mix the ingredients gently until they are just combined. It is normal for the batter to be thick and slightly lumpy, so don't worry if it doesn't look completely smooth.
- Use medium heat for the pan. Allow the pancakes to cook undisturbed until you see bubbles forming on the top and the edges begin to look set, which usually takes about 2 to 3 minutes.
- Once the bubbles form and the edges set, flip the pancakes carefully to ensure they remain intact.
- Since the recipe is naturally low in fiber (1g), consider serving the pancakes with high-fiber toppings such as fresh berries, chia seeds, or ground flaxseed to create a more well-rounded meal.
