Chocolate PB2 Porridge

- 1/2 cup Rolled oats old-fashioned (40g)
- 1 cup Skim milk 240ml
- 2½ tbsp PB2 powdered peanut butter 16g
- 1 tbsp Unsweetened cocoa powder 5g
- 1 pinch Fine sea salt
- 1 teaspoon Zero-calorie sweetener optional to taste
Instructions
- In a small saucepan, whisk together the rolled oats, skim milk, unsweetened cocoa powder, and a pinch of salt over medium heat until the cocoa powder is fully incorporated without lumps.
- Bring the mixture to a gentle simmer. Reduce the heat slightly to low-medium and stir frequently with a silicone spatula or wooden spoon for 4 to 5 minutes, scraping the bottom to prevent the oats from sticking as the liquid reduces.
- Once the porridge reaches a thick, creamy consistency and has absorbed most of the skim milk, remove the saucepan from the heat.
- Vigorously stir in the PB2 powder and your zero-calorie sweetener. Stirring the PB2 in off the heat prevents clumping, preserves the intense roasted peanut flavor, and thickens the porridge into a dense, fudgy texture.
- Transfer immediately to a bowl and serve warm.
Notes
Sweetener & Texture: Cocoa powder is naturally bitter; adding a zero-calorie sweetener is recommended to balance the chocolate flavor. Using a granulated sweetener like erythritol or monk fruit also helps achieve a dense, fudgy consistency without adding calories.
Consistency Control: If you prefer a looser porridge, stir in an extra 2 to 3 tablespoons of water or skim milk just before serving.
PB2 Swirl Option: Instead of stirring all the PB2 into the saucepan, you can mix 10g into the porridge and mix the remaining 6g with a teaspoon of water in a small ramekin to create a peanut butter drizzle for the top.
