Ingredients

French Toast Ingredients

  • 2 slices bread Low-calorie or low carb 2 slices
  • ½ cup egg whites 120ml
  • 2 tbsp almond milk unsweetened 30ml
  • 1 tbsp Monk fruit 15g or sweetner
  • ½ tsp cinnamon 3g ground
  • ½ tsp Vanilla extract 2½ ml
  • 1 spray Non-stick cooking spray as needed

Topping Ingredients

  • cup Greek yogurt plain low fat 80ml
  • ½ scoop Vanilla protein powder 15g
  • ½ cup Fresh berries 120g

Instructions

  • In a shallow dish wide enough to fit your bread, whisk together the egg whites, almond milk, zero-calorie sweetener, cinnamon, and vanilla extract.
  • Toast your bread in a toaster until lightly browned
  • Place each slice of bread into the mixture, letting it soak for about 20–30 seconds per side so it fully absorbs the liquid.
  • Lightly coat a skillet with non-stick spray and place it on the stovetop over medium heat. Cook the soaked bread for 3–4 minutes on each side until golden brown and cooked through.
  • While the French toast is cooking, stir the Greek yogurt and vanilla protein powder together in a small bowl until it forms a thick, smooth glaze.
  • Plate the French toast, spread the yogurt protein glaze generously over the top, and finish with fresh berries.

Notes

  • Stale bread absorbs the egg white batter better without falling apart. If your bread is fresh, give it a light toast first to dry it out. Aim for a low-calorie loaf (around 65 calories per slice).
  • The monk fruit in the egg wash is essential. It helps caramelize the edges and is the secret to getting that dense, fudgy texture in the center.
  • If your Greek yogurt is incredibly thick, stir in a tiny splash of almond milk until it reaches a smooth, spreadable consistency.
  • Easily make this dairy-free by swapping the Greek yogurt for a coconut or almond milk yogurt, and using a plant-based protein powder.
  • If berries aren't your favorite, swap them out for a drizzle of sugar-free maple syrup, a sprinkle of crushed nuts, or sliced bananas.
