- ¼ lb Extra lean ground beef 100g
- ½ cup Marinara sauce I use Rao’s but use your favorite pasta sauce. (100ml)
- ¼ cup Light Mozzarella (low moisture part skim) 25g
- 1 slice Toasted bread low carb
- 1 medium Carrot sliced into sticks
- ½ tsp Low fat butter 5g
Add the extra lean minced beef to the pan. Stir in the marinara sauce and heat until simmering.
Stir in the shredded mozzarella cheese until it melts and is incorporated into the sauce.
While the sauce finishes, cut the carrot into sticks and toast the bread.
Spread the butter onto the toast. Spoon the cheesy bolognese sauce onto the toast and serve with the carrot sticks on the side.
- For the best texture, ensure the extra-lean ground beef is fully browned and cooked through before stirring in the marinara sauce.
- The beef bolognese mixture is perfect for meal prep. Cook the meat and sauce (without the cheese) up to 3 days in advance, then store them in an airtight container in the fridge. When ready to eat, reheat the sauce, stir in the mozzarella until melted, and serve over fresh toast.
- If you want to switch up the protein, ground turkey or ground chicken are excellent lean substitutes for the beef.
- If you don't have mozzarella on hand, shredded provolone, cheddar, or a dusting of Parmesan will also work well.
- To bulk up the nutritional value, sauté finely diced onions or minced garlic in the pan before adding the beef, or fold in a handful of fresh spinach right before serving.
- You can use for favorite pasta sauce to flavor up the ground beef.
